Ingredients
 
 
  • 29 oz black beans canned, drained and rinsed
  • 12 oz bag frozen peppers and onions
  • 1/4 cup fresh cilantro
  • 2 cups shredded cheese of preference
  • 2 tbsp butter
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 1/2 tsp cumin
  • 2 tbsp fresh lime juice
  • 1/2 tbsp lime zest
For serving:
  • 8 medium tortillas
  • 2 cup rice uncooked, more if making burrito bowls
Instructions
 
Freezer Prep Directions:
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Add all ingredients, except cheese, tortillas, and rice, into a freezer bag.
  • Seal bag, removing as much air as possible, and freeze for up to three months.
Slow Cooker Directions:
  • Thaw freezer bag in fridge 12-24 hours before cooking.
  • Dump contents of gallon freezer bag into slow cooker.
  • Cook on low for 3-4 hours.
  • Stir and add 1/3 cup bean mixture into tortilla. Add rice, and mozzarella cheese. Then wrap and grill on a skillet on the stovetop for a few min on each side.
  • Serve and Enjoy!
Instant Pot Directions
  1. Dump the contents of the freezer bag into the Instant Pot, add 1/4 cup water.
  2. Set to High Pressure for 15 minutes, then allow a 10-minute natural release followed by a quick release. 
  3. Stir and add 1/3 cup bean mixture into tortilla. Add rice, and mozzarella cheese. Then wrap and grill on a skillet on the stovetop for a few min on each side.
  4. Serve and Enjoy!

  1. Label Freezer bag with recipe name, cooking from frozen directions and expiration date (todays date plus three months).
  2. Add all ingredients, except cheese, tortillas, and rice into freezer bag.
