I LOVE anything buffalo, and if you’re anything like me then you are going to fall in love with this buffalo chicken sliders recipe. A great option for game day or an easy weeknight meal. Its full of flavor and gives you a kick in the best way. My favorite part? You can make this recipe ahead of time, freeze it, then just dump and go when you need dinner to cook itself.
These Buffalo Chicken Sliders are spicy, cheesy, and perfectly saucy on soft, buttery rolls. They’re an easy, crowd-pleasing favorite for busy weeknights, game day, or anytime you need a quick, flavor-packed meal.
Add sauce ingredients to a high-speed blender and blend until smooth. (You may have to scrape sides once or twice).
Add ½ cup Buffalo Sauce and chicken thighs to the slow cooker. Reserve the remaining sauce for serving.
Cook on low for 5-6 hours.
Remove chicken from the slow cooker and shred with two forks. Stir in reserved sauce, then serve on Hawaiian rolls with ranch and blue cheese (or provolone).
Optional: Mix the reserved Buffalo Sauce in with the shredded chicken before serving, or serve as extra sauce on the side.
Freezer Meal Prep Directions
Prepare a gallon freezer bag, labeling according to your preferred method.**
Add sauce ingredients to a high-speed blender and blend until smooth. (You may have to scrape sides once or twice).
Add ½ cup Buffalo Sauce and chicken thighs to a freezer bag. Reserve the remaining sauce for serving. (Store reserved sauce in an airtight container in fridge or freezer.)
Seal bag, removing as much air as possible, and freeze for up to 3 months.
Slow Cooker | Cooking Directions
Thaw freezer meal in the fridge for 12-24 hours before cooking.
Dump the contents of the freezer bag into a slow cooker.
Cook on low for 5-6 hours.
Remove chicken from the slow cooker and shred with two forks. Stir in reserved sauce, then serve on Hawaiian rolls with ranch and blue cheese (or provolone).
Optional: Mix the reserved Buffalo Sauce in with the shredded chicken before serving, or serve as extra sauce on the side.
Instant Pot | Cooking Directions
Thaw in the fridge for 12-24 hours before cooking. (Meals can be cooked from frozen, but some Instant Pots may trigger a burn notice due to slow steam generation.)
Dump the contents of the freezer bag, plus 1 cup water, into the Instant Pot.
Set to high pressure for 15 minutes, then allow a 10-minute natural release followed by a quick release.
Remove chicken from the slow cooker and shred with two forks. Stir in reserved sauce, then serve on Hawaiian rolls with ranch and blue cheese (or provolone).
Optional: Mix the reserved Buffalo Sauce in with the shredded chicken before serving, or serve as extra sauce on the side.

The recipe says to reserve half the sauce for day of cooking, but doesn’t say what to do with it after that. Does it go in the crockpot? Or is it added after the chicken is shredded?
