Instructions
Line a baking sheet with parchment paper and set aside.
Rinse the blueberries and raspberries and let them dry completely. (This is important so the chocolate sets properly.)
Melt the chocolate by adding the chocolate chips to a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each round, until fully melted and smooth. This usually takes about 1½–2 minutes total. (Tip: Don’t overheat. Once it’s mostly melted, keep stirring and let the residual heat finish the job.)
Spoon about 1 tablespoon (or a small spoonful) of melted chocolate onto the parchment-lined baking sheet. Gently spread it into a small circle.
Immediately press blueberries, raspberries, and banana chips into the melted chocolate. I like to do about 4–6 spoonfuls of chocolate at a time, then add the fruit before the chocolate starts to set. Mix and match or keep them simple.*
Place the baking sheet in the refrigerator for 30 minutes to 1 hour, or until fully set.
Once hardened, peel them off the parchment paper and store in a glass container in the fridge.
Notes
*If swapping fruit:Fresh fruit works best, Avoid fresh banana slices (they brown), Avoid frozen fruit (it releases too much moisture)
