What is lime zest? Why fresh lime juice?

Lime zest is taken from the rind of the fresh lime. It adds so much freshness and flavor to any recipe. I also always try to use fresh lime juice because it has a completely different taste then bottled lime juice. Bottled tends to have an artificial and bitter taste giving the dish a less pleasant flavor.

How to make the homemade taco seasoning?

SUPER EASY! Just place all the seasonings together into a small bowl and mix. You can make what you need and use it all up or try mixing together extra and set it in a glass spice jar in the cabinet ready to go whenever you need it.

How to make this chicken fajitas recipe in the slow cooker?

Just throw everything into a slow cooker and let it cook for you. No mess, no fuss and a delicious home-cooked dinner!

What kind of meat can I use?

Use chicken breasts or chicken thighs for this recipe. Try to remove skin from whatever cut of meat you use so that there is not too much fat in the dish.
You can even use frozen chicken, although I prefer to use raw chicken and not cooked unless it is fresh rotisserie chicken.
When removing your chicken from the slow cooker or instant pot you can serve the chicken in a couple different ways. From thinly sliced chicken to shredded chicken, your fajitas will be delicious.

What to serve with this chicken fajitas recipe?

Serve with rice, tortillas, cauliflower rice or on a bed of shredded carrots. You can also top it off with all of your favorite taco seasonings plus salsa, guac and or sour cream.
There are endless possibilities when it comes to homemade fajitas. You will LOVE theses and love getting to feed the family something even the picky eaters will continue to ask for.

How to store this chicken fajita recipe?

After cooking store in fridge in an airtight container for 3-5 days.

Do I need a slow cooker for this recipe?

This freezer meal is ideal for a slow cooker or crockpot. Freezer meals are designed to be quick and easy, with little to no meal prep involved. You can use a slow cooker or crock pot for this recipe. It is designed to be fast and easy so you do not have to take the time to cook all night.

Can I use an instant pot instead?

Of course! If you like your bell peppers and onions crisp then be sure to add them to the pressure cooker after cooking or in the skillet for a few minutes. Placing them in the instant pot to cook along with the chicken will break them down to be soft.
Instant pot fajitas are great with any protein you choose. Make instant pot veggie fajitas, instant pot chicken fajitas with salsa or instant pot chicken fajita bowls.

No problem! Just throw the freezer meal in your slow cooker or instant pot and you’re all set.

If it doesn’t fit thaw it for a few minutes in warm water. (You may need to add an extra 30 minutes cook time if completely frozen when cooking).

The chicken? Absolutely! But I would not recommend freezing cooked fajita mix with the peppers. The texture of your cooked peppers and onions will be quite mushy and not very preferable. But the chicken is great, flavorful and can be frozen individually to be used when needed.

Thats the best part about the instant pot and slow cooker. WARM FUNCTION! By cooking things and not feeling the pressure to have it all ready the moment your family or guests arrives you will feel free!

Just set your slow cooker or instant pot to warm for the perfect fajita chicken dinner. Tacos, bowls, quesadillas, and the list goes on.

A serving size assumes 1 1/2 cup of chicken fajitas mix at 265 kcal per serving.

  1. Hi! Thanks for the recipe, but I have a question. I live alone, and I’d prefer to separate rate this recipe into three batches rather than prepare it all at once. If I prep all three parts at once, and just divide the spices into three parts, that’s no problem. But will it change the Instant Pot cooking time?
Also, how much of the taco seasoning mix do I use if I use homemade instead of a prepared packet?
Thanks in advance for your response. 11 August, 2021

    1. Hey there! You can definitely split the recipe three ways, just divide the spices in three. I have never tried it in smaller batches but I imagine your cook time should remain the same. The amount of spices given in the homemade taco seasoning ingredient list on the recipe card is the amount you would need for the recipe. So I would mix it all together in a bowl and split it three way. 🙂 I hope you enjoy! We love this one.
