Instant Pot Chicken Fajitas

This easy chicken fajita freezer meal is preservative free, healthy and full of flavor! Make instant pot chicken fajitas or slow cooker chicken fajitas.

Not to mention chicken fajitas are super cost effective. Eating well on a budget is doable for you if you have the simple recipes that taste good.

Often times when I go out to a restaurant I wish I were home (besides the clean up part) because I actually like my food better. Cooking for years has allowed me to perfect tons of recipes and make sure they are simple healthy and affordable!

This is one of those recipes that is simple, healthy and affordable!

AND who doesn’t like a good chicken fajita dinner!

You can use a fajita seasoning packet if you wish but I prefer using my own fresh organic spices. Organic spices do not have to be expensive and do not contain any of the gunk in seasoning packets or cheap spices.

Yes! The best part about fajitas is they are totally customizable for your dietary needs.  I also love to serve fajitas at a party so that everyone gets exactly what they like. This recipe is so great for any family ready to please all those picky eaters. 

Ingredients you will need for this chicken fajitas recipe. 

  • chicken breast (or chicken thighs)
  • bell peppers
  • onion
  • diced tomatoes
  • jalapeno
  • lime zest
  • fresh lime juice
  • salt
  • pepper
  • taco seasoning packet (optional: DIY taco seasoning)

DIY Taco Seasoning Ingredients:

  • chili powder
  • ground cumin
  • paprika
  • garlic powder
  • onion powder
  • dried oregano

Easy Chicken Fajita Freezer Meal

Equipment

  • Slow Cooker or Crockpot
  • Instant Pot

Ingredients

  • 2 lb chicken breast or chicken thighs
  • 3 bell peppers sliced in 1.5-inch pieces
  • 1 large onion chopped
  • 14.5 oz can diced tomatoes liquid included
  • 1 jalapeno diced (seeds removed)
  • 1 tsp lime zest
  • 2 tbsp fresh lime juice juice of one lime
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 packet taco seasoning (optional homemade taco seasoning)

Homemade Taco Seasoning:

  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried oregano

Instructions

  • Add all ingredients into slow cooker and stir.
  • Cook on low 4 hours or high 2 hours.
  • Remove chicken breasts and slice with sharp knife. Remove peppers and onions and serve!
  • Serve in tortillas, over rice, cauliflower rice or on top of chips! Garnish with your favorite taco toppings!

Freezer Directions:

  • Label Freezer bag with recipe name, cooking from frozen directions and expiration date (todays date plus three months).
  • Add all ingredients to labeled gallon freezer bag.
  • Store in freezer for up to three months.

Slow Cooker – Cooking from Frozen Directions:

  • Thaw overnight in fridge or in the morning in some warm water (meal may not be 100% thawed but that is ok).
  • Add freezer bag contents into slow cooker.
  • Cook on low 4 hours, 4-5 hours if frozen.
  • Remove chicken breasts and slice with sharp knife. Remove peppers and onions and serve!
  • Serve in tortillas, over rice, cauliflower rice or on top of chips! Garnish with your favorite taco toppings!

Instant Pot – Cooking from Frozen Directions:

  • Thaw overnight in fridge or in the morning in some warm water (meal may not be 100% thawed but that is ok).
  • Add freezer bag contents into the instant pot.
  • Place the lid on, lock and be sure the valve is sealed so the pressure may build.
  • Cook on high pressure for 7 minutes.
  • NPR for 5 minutes then quick release the remaining pressure.
  • Remove chicken and veggies to serve. Cut chicken into desired size.
  • Optional: Ganish with fresh parsley and fresh lime slices.

Notes

  • May top with favorite taco toppings! (cheese, guacamole, salsa, etc…)
  • Make it pretty: Garnish with fresh cilantro and a lime wedge.
     
  • Don’t discard the extra liquid after cooking and use it to make rice

  1. Hi! Thanks for the recipe, but I have a question. I live alone, and I’d prefer to separate rate this recipe into three batches rather than prepare it all at once. If I prep all three parts at once, and just divide the spices into three parts, that’s no problem. But will it change the Instant Pot cooking time?
    Also, how much of the taco seasoning mix do I use if I use homemade instead of a prepared packet?

    1. Hey there! You can definitely split the recipe three ways, just divide the spices in three. I have never tried it in smaller batches but I imagine your cook time should remain the same. The amount of spices given in the homemade taco seasoning ingredient list on the recipe card is the amount you would need for the recipe. So I would mix it all together in a bowl and split it three way. 🙂 I hope you enjoy! We love this one.
