Recipe will last 3-6 months in the freezer (be sure to cover completely).
As a plant-based recipe, you do not have to thaw for 12-24 hours before cooking. Recipe can go directly from the freezer into the oven. (Note: If you froze in a glass casserole dish, place it in the oven when you turn it on to preheat so it gradually warms with the oven. Placing a cold glass dish into a hot oven will cause the casserole dish to shatter.)
Recipe can be frozen after cooking, however this does change the texture and flavor. I recommend freezing raw, not cooked.
When reheating, warm in a skillet over medium heat with a splash of water or reheat in the microwave in 30–45 second intervals, stirring between each.

Can I add meat to the recipe?
One pound of ground beef (or ground chicken or turkey), cooked, crumbled, and mixed into the filling would taste great! You’ll end up with more filling, so feel free to freeze the extra, stuff an extra pepper or two, or save it for leftovers (can you say nachos?!). If you’d like, cook the meat with taco seasoning so it’s flavorful in the stuffed peppers.
Am I able to prep and freeze just the filling?
Definitely! Freeze the filling by itself and stuff fresh peppers when you’re ready to cook – just make sure you thaw the filling first. This is a genius hack that makes your life so much easier.
How can I prevent the peppers from getting soggy?
If you uncover the dish toward the end of cooking (the last ten minutes or so), they’ll get a little crispy on top. This helps melt the cheese wonderfully, too!
What are the health benefits of quinoa?
Quinoa is one of the few plant-based complete proteins, which means it contains all 9 essential amino acids and is packed with protein (8 grams per cup!). Occasionally, I crave a good drizzle on my dinner, too, and these are some of my favorites: If you want to keep it simple, grab a roasted tomato salsa to spoon on top of your stuffed pepper. However, if you’re feeling fancy, blend an avocado with lime, ½ cup fresh cilantro, one garlic clove, a couple tablespoons of water, and salt to taste for a creamy avocado-cilantro sauce. If you’d like a creamy-but-spicy sauce, blend ½ cup yogurt (or sour cream), 1 chipotle pepper in adobo (plus a little sauce), the juice of 1 lime, 1 tbsp olive oil, a splash of honey (for balance), and salt to taste for a smoky chipotle-lime sauce.
