Meatballs are one of my favorite dinners! I love that they are the perfect size for an appetizer, dinner or even lunch. But tbh I get sick of the same old italian meatballs. SOLUTION! These yellow curry meatballs are even better!

I know its so hard to believ but there is a razy secret that makes these healthy yellow curry meatballs delicious and some of the best meatballs I have ever had!

FRUIT! Adding pear (or apple) to the recipe gives a sweetness to balance out all the spices while keeping your meatball juicy. Plus these are super diet friendly, no gluten or additives.

Are yellow curry meatballs healthy?

Yes! I am a huge component of preservative free living. We do our best to make food with whole real ingredients. This doesn’t always mean organic, mainly because we cannot afford organic for every item, but I do aim to purchase organic items where they count. 

These meatballs have a curry sauce and are made without gluten. Whole 30 and paleo approved. A great recipe for any dietary clean eating lifestyle.

What type of coconut milk can I use?

 
Use the can of coconut milk. We are wanting the coconut cream and coconut water that comes in a can of full fat coconut milk. The coconut cream is a common ingredient in curry’s that give a smooth creamy texture in the sauce. Plus there is a bit of sweetness in coconut milk which balances out the curry powder really nice. 
 

How to make the curry sauce?

SUPER EASY! In the past sauces have intimidated me. But this one is as simple as throwing all the sauce ingredients together in a food processor or high speed blender and blending until smooth. 
 

How to make this yellow curry meatballs recipe in the slow cooker?

What kind of meat can I use for yellow curry frozen meatballs?

Ground beef or ground turkey will work really well in this recipe. 
 
When ground beef was hard to find #covid I made curry turkey meatballs and couldn’t believe how much flavor they and. Usually I am worried about meatballs being too dry with ground turkey but this recipe was so tender and juicy!
 
You could also try using ground pork but be sure to balance the pork with a lower fat meat so that it is not too fatty. 
 

What to serve with this sweet curry meatballs recipe?

Serve as an app at any party with all of your other favorite apps or party meals. 
 
If you’re serving as a main dish then serve over your favorite rice (we love basmati rice) and add some hummus, pickled veggies and some naan bread for the most amazing curry dinner. I even love to make curry rice to soak up all that saucy goodness!!
 

How to store this simple curry meatballs recipe?

After cooking store in fridge in an airtight container for 3-5 days.
 

Do I need a slow cooker for this recipe?

You can use a slow cooker or crock pot for this recipe. These slow cooker curry meatballs couldn’t be easier. I do like to sear them on the stovetop or bake for a few minutes before sticking them in the crockpot tom keep your Thai curry meatballs from falling apart in the slow cooker. Curry meatballs slow cooker can also be served out of your crockpot for a party as an app. Just throw some toothpicks on the side and let everyone enjoy!

Ingredients

Meatballs:

  • 3 lb Ground Beef
  • 1 cup Onion, diced
  • 1 cup Pear, diced (You can also use apples)
  • 1 Egg
  • 2 tbsp Curry Powder
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper

Curry Sauce:

  • 1 tsp Garlic Powder
  • 2 tbsp Curry Powder
  • 6 oz can Tomato Paste
  • 1/4 tsp Ground Turmeric
  • 14 oz Full Fat Coconut Milk
  • 1/2 cup Water
  • 2 tbsp Lemon Juice (juice of one lemon)*
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper

Supplies for freezing:

  • 1 Gallon Freezer Bag

Instructions

Directions:

  • Preheat oven to 400 degrees.
  • Mix meatball ingredients together by hand and form into golf ball sized meatballs.
  • Set meatballs onto baking sheet covered with parchment paper.
  • Cook in preheated oven for 15-20 minutes.
  • Blend all curry sauce ingredients in high speed blender or food processor*If freezing meatballs for a future dinner go to freezer directions after this step is complete.
  • Pour curry sauce into a saucepan on the stove and bring sauce to a simmer.
  • When meatballs are done baking set them into a glass baking dish and top with curry sauce.
  • Serve as is or over basmati rice (cauliflower rice if paleo) and enjoy!

Freezer Directions:

  • Label Freezer bag with Recipe name, cooking from freezer directions and expiration date (todays date plus three months).
  • Preheat oven to 400 degrees.
  • Mix meatball ingredients together by hand and form into golf ball sized meatballs.
  • Set meatballs onto baking sheet covered with parchment paper.
  • Cook in preheated oven for 15-20 minutes.
  • Blend all curry sauce ingredients in high speed blender or food processor.
  • When meatballs are finished cooking remove from oven and let cool.
  • Once cool place meatballs and curry sauce into labeled gallon freezer bag and freeze for up to three months.

Cooking from Frozen (Slow Cooker) Directions:

  • Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok).
  • Dump contents of freezer bag into slow cooker.
  • Cook on low 1-2 hours or high 30 minutes - 1 hours.
  • Serve as is or over basmati rice (cauliflower rice if paleo) and enjoy!

Cooking from Frozen (Instant Pot) Directions:

  • Add 1/2 cup water for every lb of frozen meatballs going into instant pot.
  • Add in frozen meatballs from freezer bag.
  • Pressure cook on high 4 minutes. NPR
  • NPR for an additional 4 minutes then quick release.
  • Serve as is or over basmati rice (cauliflower rice if paleo) and enjoy!

That is completely up to you but the most popular in Thailand is green curry. It tends to be the spiciest and the sweetest. The high levels of coconut milk balance out the high level of spice.
