Stuffed Meatballs with Marinara Dipping Sauce
Enjoy this farm to table fresh recipe, a cheese stuffed meatball flavored with leeks, carrots and Italian seasoning. Served with a fresh ripe tomato marinara dipping sauce. Serve as the perfect appetizer at any gathering, or top off spaghetti for a family recipe sure to please everyone.

Ingredients
  
Meatballs
  • 2 lb ground beef
  • 1/2 lb cheese curds
  • 1 egg
  • 2 cloves fresh garlic
  • 1/2 cup carrots diced
  • 1/4 cup leeks diced
  • 1/2 cup bread crumbs
  • 1 tsp salt
  • 1 tsp basil
  • 2 tsp Italian seasoning
  • 1/2 tsp black pepper
Fresh Marinara Dipping Sauce
  • 4 tomatoes quartered
  • 1/4 cup leeks
  • 4 cloves garlic halved
  • 1 tbsp olive oil
  • 1 tbsp basil
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 3/4 cup broth
Instructions
 
  • Preheat the oven to 375
  • Add all of the marinara dipping sauce ingredients into a small pot onto the stovetop and bring to a boil. Once boiling simmer while you make the meatballs.
  • While your marinara dipping sauce simmers. Add all the meatball ingredients, except the cheese curds, into a bowl and mix together.
  • Scoop out some of your meatball mixture and form a cup like shape. Add a cheese curd into the indent and close meatball around cheese curd. Do this until all your meatball mixture is used up.
  • Baked meatballs in oven for 15-18 minutes depending on size. (Mine were about 2 inches across and took about 18 minutes.)
  • Your marinara sauce should still be simmering.
  • When your meatballs are done, remove from the oven and set aside to cool. Remove your marinara sauce from the stove top, let cool for a few minutes and blend.
  • You did it! Serve your meatballs with the dipping sauce and enjoy!
