1 gallon freezer bag
- 1-2 Lbs Meatballs
- 14.5 oz Full-fat coconut milk 1 can
- 2 tbsp Curry paste
- 6 oz Tomato Paste
- 1 Fresh lemon juice Zest and Juice of 1 Lemon
For serving- 2 cups rice uncooked, (cook according to package before serving)
Freezer Prep DirectionsPrepare a gallon freezer bag, labeling according to your preferred method.
Add all ingredients to a freezer bag
Seal bag, removing as much air as possible, and freeze for up to three months.
Slow Cooker Directions:Thaw freezer bag in fridge 12-24 hours before cooking.
Add the freezer bag contents to the slow cooker.
Cook on low for 3-4 hours.
Stir, serve over rice, and enjoy!
Instant Pot Directions
- Dump the contents of the freezer bag into the Instant Pot, add 1/2 cup water.
- Set to High Pressure for 8 minutes, followed by a quick release.
