Greek Chicken with Tomatoes and Feta
Our Greek Chicken with Tomatoes and Feta is both gourmey and extremely convenient to prepare. Part of my make-ahead freezer meal repertoire, all it takes it a few simple steps of preparation to have this on hand in your freezer, just waiting to leave your dinner guests with jaws dropped and begging for seconds.

1 gallon freezer bag
1 Deep baking pan
Parchment Paper
- 2-3 lbs Chicken breasts cut into 1-inch cubes
- 10 oz Grape tomatoes
- 6 oz Kalamata olives Pitted
- 3 tbsp Olive oil
- 1 tbsp Lemon juice
- 1 tsp Salt
- 1 tsp Black pepper
- 2 tsp Oregano
- 4 oz Feta cheese
Prep/freezer directions:Prepare a gallon freezer bag, labeling according to your preferred method
Add all ingredients, except feta cheese, to the freezer bag. Then seal and shake to fully coat ingredients.
Re-seal bag, removing as much air as possible, and freeze for up to three months.
Oven cooking directions:Thaw freezer bag in fridge 12-24 hours before cooking.
Preheat oven to 400F.
Cover a large, deep baking pan with parchment paper. Dump freezer bag contents onto baking pan. Top with feta cheese.
Cook in preheated oven for 25-30 minutes
Let rest for 10 minutes, then serve and enjoy!
