  • 1 High speed blender or food processor
  • 1 Slow Cooker
Ingredients
  
  • 1 lb Chicken thighs boneless/skinless
  • 1 lb Sweet potato peeled and roughly chopped
  • 1 Onion medium-diced
Sauce (Blend Together)
  • 2 tsp Coconut oil
  • 2 tsp Garlic powder
  • 1/4 tsp Ground ginger
  • 1 tsp Coriander
  • 1 tsp Cumin
  • 1 tsp Cardamom
  • 1/2 tsp Salt
  • 14.5 oz Full Fat coconut milk can
  • 6 oz Tomato paste can
Day of Cooking:
  • Lime garnish
  • Fresh ciltantro garnish
Instructions
 
Prep/Freezer Directions:
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Blend sauce ingredients in a high-speed blender of food processor.
  • Add all ingredients, except garnish ( lime and cilantro), to a labeled gallon freezer bag.
  • Seal bag, removing as much air as possible. Freeze for up to three months.
Slow Cooker Directions:
  • Thaw overnight in the fridge or in the morning in water( meal may not be 100% thawed but that is okay)
  • Add the freezer bag contents to a slow cooker.
  • Cook on low for 4-6 hours.
  • Stir and serve over cauliflower rice. Garnish with cilantro and lime wedge.
