Chicken Pot Pie Whole 30 Freezer Meal Recipe
What makes this recipe truly incredible is the ease of it. It’s a make-ahead freezer meal, designed for those days when cooking dinner from scratch simply isn’t in the cards.

  • 1 crockpot
  • 1 gallon freezer bag
Ingredients
 
 
  • 2 lbs chicken thighs boneless, skinless
  • 1 cup raw cashews Soaked in 2 cups hot water for 15 minutes and blended to make a cashew cream
  • 3 tbsp olive oil
  • 2 cups yellow onion diced
  • 2 cups carrots shredded
  • 3 stalks celery diced
  • 2 Yukon potatoes
  • 2 tsp garlic powder
  • 1/2 tsp poultry seasoning
  • 2 tbsp nutritional yeast
  • 2 tsp salt
  • 1/2 tsp black pepper
Instructions
 
Freezer Prep directions
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Add all ingredients, except broth and water, to the labeled freezer bag.
  • Seal bag, removing as much air as possible, and freeze for up to three months. 
Slow Cooker Directions
  • Thaw freezer bag in fridge 12-24 hours before cooking.
  • Dump contents of the freezer bag, plus 4 cups of chicken broth and 2 cups water, to slow cooker. 
  • Cook on low for 7-8 hours.
  • Stir and serve!
Instant Pot Directions
  1. Dump the contents of the freezer bag into the Instant Pot, add 4 cups chicken broth and 2 cups water.
  2. Set to High Pressure for 35 minutes, then allow a 10-minute natural release followed by a quick release. 
  3. Stir and serve!
