Cauliflower Mac and Cheese Freezer Meal
The heartiness of traditional mac and cheese is met with the nutritional powerhouse of cauliflower, bringing you the creamy, savory goodness you’d expect from mac and cheese, except our version comes with additional benefits: health and convenience.

Equipment
  • 1 9x13 aluminum/glass baking dish with lid (or aluminum foil to cover)
  • 1 High speed blender/food processor
Ingredients
  
  • 1 Large Head Cauliflower chopped into 1-inch cubes
  • 1 1/2 cup Cashews
  • 1 tsp Garlic powder
  • 1 1/2 tsp Salt
  • 1/2 tsp Mustard powder
  • 1/2 cup Nutritional yeast
  • 3/4 tsp Turmeric
  • 1 tsp Black pepper
  • 1 1/2 cup Almond milk
Instructions
 
Prep/Freezer directions:
  • Label 9x13 Pan/Dish with recipe name, cooking directions and expiration date (today's date plus three months)
  • Cover cashews with hottest tap water and allow to soak for 15 minutes.
  • While cashews soak, chop up cauliflower head.
  • Step 4: Strain cashews, add to a high-speed blender or food processor. Add remaining cheese sauce ingredients and blend until smooth.
  • Add cauliflower to 9x13 Pan/Dish, pour cheese sauce over cauliflower, stir together, cover and freeze for up to three months.
Oven Cooking directions:
  • Preheat oven to 450°F
  • Remove Cauliflower mac and cheese from freezer and place in preheated oven covered with aluminum foil. Cook for 40 minutes.
  • Uncover and cook an additional 35-40 minutes.
  • Remove from over, sauce should be bubbling, allow to rest for 10-15 minutes before serving
