So when we went plant-based Whole 30, I was determined to cultivate a mac and cheese recipe that checked all of my dietary boxes and brought that same delicious nostalgia I knew so well.   • 1 9×13 aluminum/glass baking dish with lid (or aluminum foil to cover)
  • 1 High speed blender/food processor
Ingredients
  
  • 1 Large Head Cauliflower chopped into 1-inch cubes
  • 1 1/2 cup Cashews
  • 1 tsp Garlic powder
  • 1 1/2 tsp Salt
  • 1/2 tsp Mustard powder
  • 1/2 cup Nutritional yeast
  • 3/4 tsp Turmeric
  • 1 tsp Black pepper
  • 1 1/2 cup Almond milk
Instructions
 
Prep/Freezer directions:
  • Label 9×13 Pan/Dish with recipe name, cooking directions and expiration date (today's date plus three months)
  • Cover cashews with hottest tap water and allow to soak for 15 minutes.
  • While cashews soak, chop up cauliflower head.
  • Step 4: Strain cashews, add to a high-speed blender or food processor. Add remaining cheese sauce ingredients and blend until smooth.
  • Add cauliflower to 9×13 Pan/Dish, pour cheese sauce over cauliflower, stir together, cover and freeze for up to three months.
Oven Cooking directions:
  • Preheat oven to 450°F
  • Remove Cauliflower mac and cheese from freezer and place in preheated oven covered with aluminum foil. Cook for 40 minutes.
  • Uncover and cook an additional 35-40 minutes.
  • Remove from over, sauce should be bubbling, allow to rest for 10-15 minutes before serving
