Golden Lentil and Spinach Soup Plant-Based Whole30 Freezer Meal Recipe
One of our favorite things about this recipe is that it’s a make-ahead freezer meal, which means it’s waiting in your freezer to rescue you on the days when dinner is the last thing you have time for. Because it’s both plant-based and compliant with Whole 30 standards, it’s the ideal solution for parents who want convenience, but refuse to compromise on wholesome nutrition.

Equipment
  • 1 gallon freezer bag
  • 1 Slow Cooker or Instant Pot
Ingredients
  
  • 2 cups Red Lentils uncooked
  • 2 Carrots diced
  • 1 1/2 cup Onion diced
  • 2 tsp Garlic powder
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tsp Turmeric
Day of Cooking:
  • 4 cups Vegetable broth
  • 2 cups Fresh spinach lightly chopped
  • 1/2 cup Coconut cream
Instructions
 
Prep/Freezer Directions:
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Add all ingredients, except Day of Cooking ingredients, to the freezer bag.
  • Seal bag, removing as much air as possible, and freeze for up to three months.
Slow Cooker Directions:
  • Dump the contents of the freezer bag, plus 4 cups vegetable broth, into a slow cooker.
  • Cook on high for 4-5 hours.
  • Stir in coconut cream and spinach, until coconut cream is fully blended and spinach has wilted.
