Chicken Fajita Bowl Whole 30 Freezer Meal Recipe
It is the ultimate make-ahead freezer meal that fits perfectly into your schedule because it requires next to nothing- not even your time! One those chaotic weeknights, you'll have the luxury of pulling a wholesome, flavorful dinner out of your freezer to save the day (and your sanity)

Equipment
  • 1 gallon freezer bag
  • 1 Slow Cooker
Ingredients
  
  • 2 lb Chicken thighs
  • 12 oz Frozen peppers and onions bag
  • 14.5 oz Diced tomatoes with liquid can
  • 1 Jalapeno diced, seeds removed
  • 1 tsp Lime zest
  • 2 tbsp Lime juice fresh
  • 1 cup Salsa Whole 30 approved
Homemade Taco Seasoning
  • 2 tsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Dried oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper
Day of Cooking:
  • 12 oz Cauliflower rice bag
  • Your favorite whole 30 taco toppings
Instructions
 
Prep/Freezer Directions:
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Add all ingredients to the freezer bag
  • Store in the freezer for up to three months.
Slow Cooking Directions:
  • Thaw overnight in the fridge or in the morning in water ( meal may not be 100% thawed, but that is okay)
  • Add the freezer bag contents to the slow cooker
  • Cook on low for 4-6 hours
  • Remove chicken and shred or slice. Stir back into the slow cooker.
  • Serve over cauliflower rice and garnish with your favorite whole 30 taco toppings!
