Hearty Vegetable Stew - Plant Based Whole 30 Freezer Meal Recipe
Think tender carrots, potatoes, and a medley of seasoned vegetables, lovingly simmering in a potful of flavorful broth with aromatic herbs. And the true beauty of it? You can prepare it in advance, tuck it into the freezer, and have a homemade meal whenever you please.

  • 1 gallon freezer bag
  • 1 Slow Cooker
Ingredients
  
  • 1 1/2 cup Frozen Green pepper diced
  • 1 Zucchini diced
  • 1 1/2 cup Frozen onion diced
  • 14.5 oz Diced tomatoes can
  • 4 tsp Salt
  • 1 tbsp Garlic powder
  • 2 Whole carrots peeled/diced
  • 2 Sweet Potatoes peeled/diced
  • 1 tsp Black pepper
  • 1 tsp Thyme
  • 1 tsp Dried oregano
  • 1 tsp Dried parsley
  • 1 tsp Rosemary
Day of Cooking:
  • 4 cups Vegetable Broth
  • 2 tbsp Lime juice juice of 1 lime
Instructions
 
Prep/Freezer Directions:
  • Prepare a gallon freezer bag, labeling according to your preferred method. 
  • Add all ingredients, except the broth and lime juice, to the freezer bag. 
  • Seal bag, removing as much air as possible and freeze for up to three months.
Slow Cooker | Cooking Directions
  • Dump the contents of the freezer bag, plus 4 cups vegetable broth, into a slow cooker.
  • Cook on high for 7-9 hours.
  •  Stir in lime juice. Serve and enjoy!
