Sausage and Peppers Baked Pasta
This Sausage and Peppers Baked Pasta is one of our heartier make-ahead freezer meals, and it is filled with all the good stuff; tender gluten-free pasta, juicy Italian sausage, colorful bell peppers, an robust marinara dance together beneath a layer of a melted Italian cheese blend.

Equipment
  • 1 9x13 oven and freezer-safe casserole dish/pan
  • Lid (aluminum foil works great)
Ingredients
  
  • 1 lb Ziti or Penne pasta Gluten-Free
  • 1 lb Ground Italian sausage cooked and crumbled
Sauce Ingredients:
  • 2 Bell peppers diced
  • 1 Onion diced
  • 24 oz Marinara sauce Gluten-free
  • Sauce jar filled with water
  • 1 cup Mozzarella cheese Shredded
  • 1/2 cup Parmesan cheese grated
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper
Instructions
 
Prep/Freezer Directions:
  • Label 9x13 pan/dish with recipe name and cooking directions according to your preferred labeling method.
  • In a skillet brown Italian sausage and set aside to cool.
  • Mix remaining ingredients in 9x13 pan, then stir in the browned Italian sausage once cooled.
  • Cover and freeze for up to 3 months.
Oven Cooking Directions:
  • Preheat oven to 400°F.
  • Remove Sausage and Peppers Baked Pasta from freezer and place in preheated oven covered with aluminum foil. Cook for 40 minutes.
  • Uncover and cook an additional 20-30 minutes.
  • Remove from oven, allow to rest for 10-15 minutes before serving.
Dietary Adjustments
Make it Gluten-Free:
  • Ensure pasta is gluten-free
  • Ensure marinara sauce is gluten-free
Make it Dairy Free:
  • Omit mozzarella for dairy free or use a dairy free mozzarella alternative. 
  • Omit parmesan cheese for dairy free or use a dairy free parmesan alternative.
