Baked Gnocchi with Tomato and Mozzarella Freezer Meal Recipe
Aside from making you feel like royalty with its exquisite flavor, our Baked Gnocchi with Tomato and Mozzarella makes you feel like a queen (or king!) because it delivers convenience and ease to you on a silver platter. Fluffy, rich gnocchi, is bathed in rich marinara, an Italian cheese blend, and the perfect combination of aromatics and textures

Equipment
  • 1 9x13 oven and freezer-safe casserole pan/dish
  • Lid for pan/dish (aluminum foil works great)
Ingredients
  
  • 1 lb Gnocchi Gluten-Free
  • 12 oz Diced green peppers and onions. bag
  • 24 oz Marinara sauce
  • Water Fill sauce jar half full
  • 2 cups Mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 tbsp Italian seasoning
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1-2 tbsp Capers
For Serving:
  • 1-2 tbsp Capers Optional garnish
Instructions
 
Prep/Freezer Directions:
  • Label a 9x13 Pan/Dish with recipe name, cooking directions according to your preferred method. 
  • Add all ingredients to 9X13 pan and stir to combine.
  • Cover and freeze for up to three months.
Oven Cooking Directions:
  • Preheat oven to 400°F
  • Remove baked gnocchi from the freezer and place in preheated oven covered with aluminum foil. Cook for 40 minutes.
  • Uncover and cook an additional 35-40 minutes.
  • Remove from oven, allow to rest 10-15 minutes before serving.
Dietary Adjustments
Make it Gluten Free: 
  • Ensure Gnocchi is Gluten Free (Best one I have found is at Whole Foods)
Make it Dairy Free:
  • Omit Mozzarella for dairy free or replace with mozzarella substitute.
