If adding carrots or celery, add them to the freezer bag along with the other ingredients. If you’d prefer to add spinach, we recommend adding either fresh, chopped baby spinach or chopped frozen spinach at the end of the cooking process, just before adding the coconut cream. If you choose chopped frozen spinach, it is best to warm it and drain it of the excess liquid first so the soup is not overly watery.
What other plant-based options are there to make the soup creamy other than coconut milk/cream?
Cashew cream is a great way to make this soup creamy without using coconut milk or coconut cream and while staying plant-based. Soak raw cashews in boiling water for 20 minutes, drain the water, and then blend the cashews with enough water to reach the consistency you’d like. Then, stir the cashew cream into the Cauliflower Soup at the end of the cooking process in place of the coconut cream.
