My kids are not the biggest fans of soups, but Panera Bread, they make some amazing soups, so I went on a mission to make a copy cat recipe of the Broccoli Cheddar Soup my kids love so much, and I created a new recipe that tastes just as good, if not better than Panera’s version. My kids approve this message!!! 🙂

  • gallon freezer bag


  • 4 Cups Chicken Broth
  • 1 Can Coconut Milk 14.5 oz
  • 2 Cups Carrots Shredded
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dijon Mustard
  • 1 head Broccoli Florets diced
  • 1 small Onion Finely diced
  • 6 Cups Hard Cheddar Cheese
  • 1/4 Cup Butter
  • 1/4 Cup Flour
  • 1/8 tsp Nutmeg optional


Freezer Directions

  • Label Freezer bag with Recipe name, cooking from freezer directions and expiration date (todays date plus three months).
  • Add all ingredients to freezer bag, except sharp cheddar cheese and coconut milk.
  • Store in freezer for up to three months.

Cooking Directions

  • Add all ingredients to slow cooker except sharp cheddar cheese and coconut milk
  • Cook on low 6-7 hours, or on high 4-5 hours.
  • Add in sharp cheddar cheese and coconut milk
  • Cook on low 1 more hour, or on high for 30 minutes
  • Stir and serve
