  • 1 Slow Cooker or Crock Pot
  • 1 High speed blender
  • 1 gallon freezer bag
Ingredients
 
 
  • 2-3 lbs ground chicken
  • 2 cups carrots shredded
  • 2 cups mushrooms diced
  • 8 oz water chestnuts chopped
Sauce (Blend Together):
  • 1 tbsp garlic powder
  • 3 tsp sesame oil
  • 1/2 cup coconut aminos
  • 1 tbsp rice vinegar
  • 2 tsp ground ginger
  • 1 tbsp almond butter
  • 1 tbsp raw honey
  • 1/4 tsp black pepper
  • 1/2 tsp salt
For serving:
  • 1 head Boston lettuce
Instructions
 
Freezer Prep Directions:
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Add sauce ingredients into a blender and blend until smooth. (You may have to scrap the sides once or twice).
  • Add all ingredients, except for serving, to labeled gallon freezer bag.
  • Seal bag, removing as much air as possible, and freeze for up to three months. 
Slow Cooker Directions:
  • Thaw freezer bag in fridge 12-24 hours before cooking.
  • Dump contents of the freezer bag into a slow cooker. (Do not stir)
  • Cook on low 5-7 hours.
  • Break up meat, stir, and serve in Boston lettuce!
  • Optional: Serve with additional soy sauce!
Instant Pot Directions
  1. Dump the contents of the freezer bag into the Instant Pot, add 1/2 cup water. (Do not stir).
  2. Set to High Pressure for 15 minutes, then allow a 10-minute natural release followed by a quick release. 
  3. Break up meat, stir, and serve in Boston lettuce!
  4. Optional: Serve with additional soy sauce!
Dietary Adjustments
Make it Gluten-Free:
  • Use coconut aminos or tamari, not soy suace.
 
 
Make it Dairy-Free:
  • This recipe is naturally dairy-free.

Notes

  • Water chestnuts provide a great crunch but if you want try skipping them and adding fresh cashews as a garnish. 
  • You can use turkey or ground beef instead of chicken if desired. 
  • Serve with some sweet and sour sauce on the side.

  • 1 tbsp Almond butter if desired sub peanut butter
  • 1 tbsp Raw honey
  • 1/4 tsp Black pepper
  • 1/2 tsp Salt
  • For serving:
  • 1 head Boston lettuce

How to make a Chicken Lettuce Wraps

Prep/freezer directions:

  1. Label Freezer bag with recipe name, cooking from frozen directions and expiration date (todays date plus three months).
  2. Add sauce ingredients into a blender and blend until smooth.
  3. Add all ingredients to labeled gallon freezer bag.
  4. Store in freezer for up to three months.

Cooking directions:

  1. Thaw overnight in fridge or in the morning in some warm water (meal may not be 100% thawed but that is ok).
  2. Add freezer bag contents into slow cooker.
  3. Cook on low 5-7 hours.
  4. Break up meat, stir, and serve in Boston lettuce!
  5. Optional: Serve with additional soy sauce!
