Today I had one of those, oh crap I forgot to plan dinner moments, so I spent 60 seconds pulling out a crockpot freezer meal and dumping it into the crockpot. All done!

Are tacos healthy?

Yes! It all depends on what you top off the chicken with. I love to use avocados, fresh veggies, salsa and guac on top of a gluten free tortilla or rice. You can also use any kind of tortilla that works with your dietary preferences. Lots of cheese and/or sour cream can take you in a different direction depending on your diet and portion size. 

Although I love to top off the taco with a bit of cheese at the end.

Ingredients

Main:

  • 2 lb Bone-In Chicken Thighs, no skin*
  • 3 tbsp Olive Oil
  • 1 tbsp Chili Powder
  • 1 tsp Pepper
  • 1 tsp Salt
  • 1/2 tsp Cumin
  • 1/2 tsp Red Pepper Flakes*
  • 1/2 tsp Paprika
  • 1/2 tsp Oregano
  • 1 1/2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1 tbsp Dried Parsley
  • 3/4 tsp Dill

Fresh Ingredients (Needed Day of Cooking):

  • 12 Medium tortillas of dietary preference
  • 2 cup Lettus, chopped
  • 1 Bunch fresh cilantro, diced
  • 2 Tomatos, chopped
  • Any other favorite taco toppings!

Supplies for freezing:

  • 1 Gallon Freezer Bag

Instructions

Directions:

  • Add all main ingredients into slow cooker.
  • Cook on low 6-8 hours or high 3-4 hours.
  • Shred chicken, remove bones, and stir back into sauce in slow cooker.
  • Serve in preferred tortillas or over cauliflower rice with favorite taco toppings!

Freezer Directions:

  • Label gallon freezer bag with recipe name, cooking from freezer directions and expiration date (todays date plus three months).
  • Add all main ingredients to labeled freezer bag (fresh ingredients are not needed until day of cooking).
  • Seal bag, removing as much air as possible and freeze for up to three months.

Cooking from Freezer Directions:

  • If desired, Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok).
  • Dump contents of gallon freezer bag into slow cooker.
  • Cook on low 6-8 hours or high 3-4 hours.
  • Shred chicken, remove bones, and stir back into sauce in slow cooker.
  • Serve in preferred tortillas or over cauliflower rice with favorite taco toppings!
