How do you make this Spicy Vegan Tortilla Soup Recipe?
Spicy Vegetarian Tortilla Soup
- Slow Cooker or Crockpot
- 14.5 oz can black beans
- 14.5 oz can diced tomatoes
- 4 cups broth of preference
- 1 tsp cumin
- 3 oz can tomato paste
- 2 tsp garlic powder
- 1 large yellow onion chopped
- 1/2 tsp pepper
- 1 tsp salt
- 4.5 oz diced green chilies
- Add all ingredients into slow cooker and stir.
- Cook on low 3-4 hours.
- Stir and serve!
- Label Freezer bag with recipe name, cooking from frozen directions and expiration date (todays date plus three months).
- Add all ingredients to labeled gallon freezer bag.
- Store in freezer for up to three months.
Cooking from Frozen Directions:
- Thaw overnight in fridge or in the morning in some warm water (meal may not be 100% thawed but that is ok).
- Add freezer bag contents into slow cooker.
- Cook on low 3-4 hours.
- Stir and serve!
- Optional: Garnish with tortilla chips (of dietary preference), cheese and fresh clantro.
- Make it pretty with a fresh lime wedge on the side!
- If you do not want a spicy soup omit the green chilies. Still delicious just no kick.
