Homestyle Beef Stew

Enjoy this low carb beef stew by using parsnipsinstead of potatoes for the same hearty stew without the extra carbs.

Equipment

  • Slow Cooker or Crock Pot

Ingredients

  • 2 lb Stew Beef
  • 2 tsp Garlic Powder
  • 1 Medium Yellow Onion diced
  • 5 tbsp Tomato Paste
  • 2 cup Baby Carrots whole
  • 1 large Parsnip peeled and chopped
  • 2 cup Celery diced
  • 2 tsp Dried Thyme
  • 2 Bay Leaves
  • 2 tsp Dried Parsley
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 cup Broth of preference I use chicken or veggie broth

Supplies for freezing:

  • 1 Gallon Freezer Bag

Instructions

  • Add all ingredients into slow cooker
  • Cook on low 8-10 hours or high 5-6 hours.
  • Stir when finished and enjoy! Optional: garnish with Parmesan cheese.

Freezer Directions:

  • Label Freezer bag with recipe name, cooking directions and expiration date (today's date plus three months)
  • Add all ingredients, except the broth, to labeled freezer bag
  • Seal bag, removing as much air as possible and freeze for up to three months

Cooking from Frozen Directions:

  • Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok)
  • Add freezer bag contents into slow cooker.
  • Cook on low 8-10 hours or high 5-6 hours. (May need and extra 30 minutes if completely frozen when placed in slow cooker).
  • Stir when finished and enjoy! Optional: garnish with Parmesan cheese.
