This low carb beef stew is so good! I was trying to get creative with how I introduce this recipe with you. Maybe use some fancy words…but honestly its just good. I don’t know how else to say it.

In the past beef stew and I have not got along

I have always struggled to find a recipe I liked but no luck. Just a lot of flavorless mush. So I decided to create my own and my it turned out soooooo good.

We had leftovers that everyone looked forward to eating the next day.

We don’t eat red meat often but when we do I want to enjoy it and this recipe hits the spot.

Yes! This homestyle beef stew is made with clean ingredients. No added sugars or preservatives. It also consists of lower carb veggies than the traditional white potato. Making this a low carb beef stew perfect for any diet. Fitting into many dietary restrictions as well.

What kind of broth should I use?

 
This recipe is great with beef broth, chicken broth or vegetable broth. You can even use water in a pinch and still get good flavor in your dish. 
 
I choose my broth depending on what is available in my kitchen at the time. Making my own bone broth or vegetable broth has completely changed my view on broth. You can easily make broth at home using your cooking leftovers.

How to cook beef stew meat?

The beef will cook on low all day long giving it a super tender texture. Its melt in your mouth delicious! You do not have to pre cook the beef at all. Just throw it into the slow cooker and enjoy dinner when it’s ready. 
 

How to make this low carb one pot beef stew in the crock pot?

Just throw everything into a crock pot or slow cooker and let it cook for you. No mess, no fuss and a delicious home-cooked dinner!

What kind of meat can I use?

Stew beef, chuck beef (cut into 1-inch cubes), or round beef. This is a quick recipe using beef stew meat if your in a hurry. 

What to serve with this low carb beef stew recipe?

If your diet calls for low carbs you can serve this with a simple side salad, ceaser salad, or grilled veggies. You could also serve over a bed of cauliflower rice. 

If you do not need to follow a low carb beef stew diet then try serving with a fun side or rice, baguette or artisan bread.

After cooking store in fridge in an airtight container for 3-5 days.

Equipment

  • Slow Cooker or Crock Pot

Ingredients

  • 2 lb Stew Beef
  • 2 tsp Garlic Powder
  • 1 Medium Yellow Onion diced
  • 5 tbsp Tomato Paste
  • 2 cup Baby Carrots whole
  • 1 large Parsnip peeled and chopped
  • 2 cup Celery diced
  • 2 tsp Dried Thyme
  • 2 Bay Leaves
  • 2 tsp Dried Parsley
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 cup Broth of preference I use chicken or veggie broth

Supplies for freezing:

  • 1 Gallon Freezer Bag

Instructions

  • Add all ingredients into slow cooker
  • Cook on low 8-10 hours or high 5-6 hours.
  • Stir when finished and enjoy! Optional: garnish with Parmesan cheese.

Freezer Directions:

  • Label Freezer bag with recipe name, cooking directions and expiration date (today's date plus three months)
  • Add all ingredients, except the broth, to labeled freezer bag
  • Seal bag, removing as much air as possible and freeze for up to three months

Cooking from Frozen Directions:

  • Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok)
  • Add freezer bag contents into slow cooker.
  • Cook on low 8-10 hours or high 5-6 hours. (May need and extra 30 minutes if completely frozen when placed in slow cooker).
  • Stir when finished and enjoy! Optional: garnish with Parmesan cheese.
