This low carb beef stew is so good! I was trying to get creative with how I introduce this recipe with you. Maybe use some fancy wordsβ¦but honestly its just good. I donβt know how else to say it.
In the past beef stew and I have not got along
I have always struggled to find a recipe I liked but no luck. Just a lot of flavorless mush. So I decided to create my own and my it turned out soooooo good.
We had leftovers that everyone looked forward to eating the next day.
We donβt eat red meat often but when we do I want to enjoy it and this recipe hits the spot.

Homestyle Beef Stew
Equipment
- Slow Cooker or Crock Pot
Ingredients
- 2 lb Stew Beef
- 2 tsp Garlic Powder
- 1 Medium Yellow Onion diced
- 5 tbsp Tomato Paste
- 2 cup Baby Carrots whole
- 1 large Parsnip peeled and chopped
- 2 cup Celery diced
- 2 tsp Dried Thyme
- 2 Bay Leaves
- 2 tsp Dried Parsley
- 2 tbsp Apple Cider Vinegar
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 2 cup Broth of preference I use chicken or veggie broth
Supplies for freezing:
- 1 Gallon Freezer Bag
Instructions
- Add all ingredients into slow cooker
- Cook on low 8-10 hours or high 5-6 hours.
- Stir when finished and enjoy! Optional: garnish with Parmesan cheese.
Freezer Directions:
- Label Freezer bag with recipe name, cooking directions and expiration date (today's date plus three months)
- Add all ingredients, except the broth, to labeled freezer bag
- Seal bag, removing as much air as possible and freeze for up to three months
Cooking from Frozen Directions:
- Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok)
- Add freezer bag contents into slow cooker.
- Cook on low 8-10 hours or high 5-6 hours. (May need and extra 30 minutes if completely frozen when placed in slow cooker).
- Stir when finished and enjoy! Optional: garnish with Parmesan cheese.
