Summer is alive and well where I live, which means all the light fares and flavors I associate with it are springing forth in my culinary memory, begging me to partake. Among those is our Lemon Herb Chicken with Vegetables. Quite literally, this dish contains all the things you’d associate with summer: lean chicken, fresh lemon, a beautiful herb blend, and the most colorful vegetables. And, it is designed to allow you to enjoy all the things summer brings.

The last thing I want to do when the weather is warm, the skies are blue, and the sun is calling us out is go back inside to make dinner.   • 2-3 lbs Chicken breasts cut into 1-inch cubes
  • 12 oz Frozen green beans bag
  • 2 Lemons 1 juiced, 1 sliced
  • 1 pint Cherry tomatoes
  • 3 tbsp Olive oil
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 1 tsp Parsley
  • 1 tbsp Garlic
  • 1 tbsp Salt

Prep/Freezer Directions
  • Label a gallon freezer bag with recipe name, cooking directions and expiration date (today's date plus three months
  • Add all ingredients to the labeled freezer bag, seal, and shake to fully coat ingredients.
  • Re-seal bag, removing as much air as possible, and freeze for up to three months.
Oven Cooking Directions
  • Thaw freezer bag in fridge 12-24 hours before cooking.
  • Preheat oven to 400°F.
  • Cover a large, deep baking pan with parchment paper. Dump freezer bag contents onto baking pan.
  • Cook in preheated oven for 20-25 minutes.
  • Let rest for 10 minutes, then serve and enjoy!
