Spicy apricot chicken

Creating fresh recipe from in season foods is one of my favorite things. This Spicy Apricot Chicken was inspired by foods in season in June and comes out with a tangy spicy sauce that is EVERYTHING!

What makes it spicy? Habaneros!

Now don’t worry, habaneros are hot but this recipe find balance with sweet fresh apricots and will leave a great soft heat in your mouth. Apricots are an in season fruit in the summer time so you can find them fresh AND on sale in the months of June-August.

Quick funny story: Heading to the store to buy apricots I realized I had no idea what a fresh apricot looked like?! I have enjoyed dried apricots many times but fresh…I actually asked someone at the store to point me in the right direction 😂  I’m so glad I did because this recipe was an absolute win and you will love it!

This Spicy Apricot Chicken recipe is a fun spicy tangy freezer meal!

Notes

  • You do not have to deseed or deveign the peppers. Since you are only adding two it will not be overly spicy.
  • If you do not like spice just skip the peppers and enjoy a sweet tangy apricot chicken.
  • If you do not have fresh garlic use 1 tsp garlic powder as a substitute.
  • My kids tend to not like spicy food and this one was a bit too spicy for them, but my husband LOVED IT!
