Ingredients
  
  • 6 Russet potatoes peeled and chopped
  • 1.5 cups Onion chopped
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
Day of Cooking:
  • 4 cups Chicken broth
  • 1 cup Heavy cream or full fat coconut milk
  • 2 cups cheddar cheese* shredded
For Serving:
  • Bacon cooked and crumbled (optional garnish)
  • Sour cream (optional garnish)
  • Green onions chopped (optional garnish)
Instructions
 
Make it Fresh – Slow Cooker Directions
  • Add all ingredients, plus 4 cups chicken broth, to the slow cooker. Do not add remaining Day of Cooking ingredients, or For Serving Ingredients yet.
  • Cook on high for 4-6 hours. (Potatoes are fully cooked when they fall apart easily when pierced with a fork.)
  • Using an immersion or high-speed blender, blend the potato soup.
  • After blending, stir in 2 cups shredded cheese and 1 cup heavy cream, until cheese melts and cream is fully incorporated. Serve and enjoy!
  • Optional: Top with bacon, sour cream, and/or green onions.
Freezer Meal Prep Directions
  • Prepare a gallon freezer bag, labeling according to your preferred method.**
  • Add all ingredients, except Day of Cooking and For Serving ingredients, to the freezer bag.
  • TIP: Add the potatoes last to prevent browning, as you peel and chop potatoes, place them in cold water to reduce browning.
  • Seal bag, removing as much air as possible, and freeze for up to 3 months.
Slow Cooker Directions:
  • Thawing is optional; recipe can go straight from the freezer to the slow cooker. No need to adjust cook time.
  • Dump the contents of the freezer bag, plus 4 cups chicken broth, into a slow cooker.
  • Cook on high for 4-6 hours. (Potatoes are fully cooked when they fall apart easily when pierced with a fork.)
  • Using an immersion or high-speed blender, blend the potato soup.
  • After blending, stir in 2 cups shredded cheese and 1 cup heavy cream, until cheese melts and cream is fully incorporated. Serve and enjoy!
  • Optional: Top with bacon, sour cream, and/or green onions.
Instant Pot Directions
  • No need to thaw – recipe can go straight from freezer to instant pot.
  • Dump the contents of the freezer bag, plus 4 cups chicken broth, into Instant Pot.
  • Set to high pressure for 10 minutes, then allow a 10-minute natural release followed by a quick release. (Potatoes are fully cooked when you fork them and they fall apart easily.)
  • Using an immersion or high-speed blender, blend the potato soup.
  • After blending, stir in shredded cheese and 1 cup cream until cheese melts and cream is fully incorporated. Serve and enjoy!
  • Optional: Top with bacon, sour cream, and/or green onions.

Notes

*For best results, buy a block and shred at home.
*For dairy-free, sub heavy cream with full-fat coconut milk at a 1:1 ratio, omit cheddar cheese or use a dairy-free alternative.
**Labeling Methods:
  1. Handwrite recipe name and cooking directions on freezer bag with permanent marker.
  2. Print off a blank freezer label, write in recipe name and cooking directions, and tape onto freezer bag.
  3. Use a pre-filled sticker label, just peel and stick to your freezer bag.
