  • 4-6 Russet potatoes peeled and chopped

  • 4 cups Chicken broth
  • 1 cup Heavy cream or full fat coconut milk

Instructions
 
Prep/Freezer Directions:
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Add potatoes, onions, garlic powder, salt and black pepper to the freezer bag. TIP: Add the potatoes last to prevent browning, as you peel, and chop potatoes keep then immersed in cold water to reduce the amount of oxygen potatoes are exposed to.
  • Seal bag, removing as much air as possible, and freeze for up to three months.
Slow Cooker Directions:
  • Dump the contents of the freezer bag into a slow cooker, add 4 cups chicken broth.
  • Cook on high for 4-6 hours. Potatoes are fully cooked when you fork them, and they fall apart easily. 
  • Using an immersion blender or high-speed blender, blend the potato soup. 
  • After blending, stir in shredded cheese and 1 cup heavy cream, until cheese melts and cream is fully incorporated.  Optional: Top with bacon, sour cream, and/or green onions.
