  • 2 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tsp Garlic powder

  • 1 1/2 tbsp Italian Seasoning
Cashew Ricotta (Blend until smooth in food processor or high speed blender)
  • 1 1/2 cup Raw cashews (Soaked if you are not using a food processor or high speed blender)
  • 1/2 cup Hot water hottest from the tap should work
  • 2 tbsp Lemon juice juice from 1 lemon
  • 2 tbsp Nutritional yeast
  • 1 clove Garlic
  • 1/2 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper

  • Add all cashew ricotta ingredients to a food processor. Pulse until combined and smooth. Set aside.

  • Top with cashew ricotta. I like to add large scoops in 6-8 sections atop veggies. Do not stir.
  • Cover with aluminum foil and freeze for up to three months.

  • Preheat oven to 450°F.
  • Place covered casserole dish into preheated oven and cook covered for 40 minutes.
  • Uncover and cook for an additional 25-30 minutes.
