Every summer when mangos come into their ripe fresh season I get excited about new recipes! Here is a brand new Mango Curry Chicken Slow Cooker recipe!
I love the idea of walking to the local market and finding fresh in season ingredients to cook with. Often times you can also get seasonal foods at a great price. In the summer months mangos are a great fresh find, and there is nothing better then a ripe mango!
So stock up on mangos and make a couple mango curry chicken freezer meals so you can enjoy the fresh ripe mango flavor in a dinner any night of the week!

Mango curry is a great recipe for the whole family, kids included, because it is not spicy. There is alot of mango sweetness in this curry and the curry spice is very mild. You can increase the spice if desired by adding in some sriracha or red pepper flakes to individual plates or even the sauce.
This mango chicken curry bowl is soy free, gluten free, dairy free and preservative free. I have also provided lots of substitute items so you can easily make this recipe with the food you have in the house.

Mango Curry Chicken
Equipment
- Slow Cooker or Crock Pot
Ingredients
- 2 lbs chicken breasts or chicken thighs
- 1 large red onion sliced
- 1 red bell pepper chopped
Mango Curry Sauce (Blend Together):
- 2 cups fresh or frozen mango
- 1 small onion
- 2 tsp garlic powder
- 2 tbsp raw honey
- 1 tsp apple cider vinegar
- 1/2 tsp ground ginger
- 1 tsp red pepper flakes
- 3 tbsp yellow curry paste
- 1/2 cup chicken broth or water
- 14.5 oz can full fat coconut milk
Instructions
- Add sauce ingredients into a high speed blender or food processor and blend until smooth. (You may have to scrap sides once or twice).
- Add chicken, red onion, and red bell pepper into slow cooker. Pour sauce over chicken and veggies.
- Cook on low 6-8 hours or high 3-4 hours.
- Remove chicken from slow cooker, shred or chop chicken, and mix chicken back into sauce in slow cooker.
- Serve over rice and enjoy! Optional: Garnish with fresh parsley and fresh mango if desired.
Freezer Directions:
- Label Freezer bag with recipe name, cooking from frozen directions and expiration date (todays date plus three months).
- Add sauce ingredients into a blender and blend until smooth. (You may have to scrap sides once or twice).
- Add all ingredients to labeled gallon freezer bag.
- Store in freezer for up to three months.
Cooking from Frozen Directions:
- Thaw overnight in fridge or in the morning in some warm water (meal may not be 100% thawed but that is ok).
- Add freezer bag contents into slow cooker.
- Cook on low 6-8 hours or high 3-4 hours.
- Remove chicken from slow cooker, shred or chop the chicken, and mix chicken back into the sauce in the slow cooker.
- Serve over rice and enjoy! Optional: Garnish with fresh parsley and fresh mango if desired.
Notes
- Garnish with fresh mango and fresh chopped parsley to make it pretty!
- Use whatever rice you have on hand or your favorite type! I love basmati rice.
