Yes! This recipe uses whole ingredients combined to bring out fresh delicious flavors! There are no preservatives and you can top off with your favorite mexican toppings according to your personal dietary preferences. I love to use guac, salsa and some cheese on top!

Many people are familiar with the packet of taco seasoning you can buy at the store. As delicious as that mixture is there can be lots of fillers and preservatives in a prepackaged spice mix.
 
One great way to eat clean and know exactly what your putting into your body is to make your own taco seasoning mix with standard spices in your pantry. 
 
 

How to make a homemade spice blend?

SUPER EASY! You can mix together the spices and their measurements in a bowl then you’re done. If you want to make extra then store your extra spice blend in a glass container in your spice cabinet.
 
You can get really creative and make your own seasoning blends or go online to find tons of recipes for different spice blends.

What kind of meat can I use?

Bone-In chicken thighs are my favorite to use in any chicken dish. They come out with amazing texture when cooked in a slow cooker or instant pot. (I remove the skin)
 
You can also use chicken thighs (bone-in optional) or boneless chicken thighs.

Serve with any of your favorite sides. I love serving with a mexican street corn and fresh slaw. You can even top of your tex mex chicken bowl with the slaw and/or your favorite taco seasonings!

Ingredients

Ingredients:

  • 2 lb Bone-In Chicken Thighs, no skin*
  • 2 tbsp Taco Seasoning
  • 2 tbsp Tapioca Starch
  • 1 Green Pepper, cut into 1-inch strips
  • 1 Large Onion, cut into 1-inch strips
  • 1 cup corn (frozen or fresh)
  • 1 1/2 cup Salsa
  • 1 cup black beans

Supplies for freezing:

  • 1 Gallon Freezer Bag

Instructions

Directions:

  • Season chicken with taco seasoning and tapioca starch.
  • Place chicken, salsa, peppers, and onions into the slow cooker and stir.
  • Cook on low 6-8 hours or high for 3-4 hours.
  • During last hour of cook time add in corn and black beans.
  • Shred chicken, remove bones and stir back into slow cooker.
  • Serve over basmati rice (or cauliflower rice if paleo).

Freezer Directions:

  • Label Freezer bag with Recipe name, cooking from freezer directions and expiration date (todays date plus three months).
  • Add all ingredients to labeled freezer bag.
  • Seal bag, removing as much air as possible and freeze for up to three months.

Cooking from Freezer Directions:

  • Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok).
  • Dump contents of freezer bag into slow cooker.
  • Cook on low 6-8 hours or high 3-4 hours.
  • During last hour of cook time add in corn and black beans.
  • Shred chicken, remove bones and stir back into slow cooker.
  • Serve over basmati rice or in tortillas* (cauliflower rice if paleo).

No problem! Just throw the freezer meal in your slow cooker and you’re all set. If it doesn’t fit thaw it for a few minutes in warm water. (You may need to add an extra 30 minutes cook time if completely frozen when cooking).

This freezer recipe will stay good 3-4 months in the freezer uncooked. Once cooked freeze for up to one month in freezer and thaw to enjoy when desired. 

This recipe calls for bone-in chicken thighs. I love the flavor and dark meat in a chicken thigh. But you can use chicken breasts (boneless or not) or even drumsticks! I would not use any chicken with skin on because you will end up having too much fat in the dinner. 

A serving size assumes 1 1/2 cup of tex mex chicken at 362 kcal per serving.

Tapioca starch (flour) is a natural gluten free substitute commonly used in place of cornstarch. It makes the recipe much healthier as well because it is an organic non-gmo natural ingredient. If you do not have tapioca starch feel free to use cornstarch or arrowroot powder instead. (Here are some other tapioca starch substitutes.)

Don’t feel the pressure to have every single ingredient on the list in order to make the recipe. Feel the freedom to be creative and use what you have in the kitchen. Sub out some veggies for whats leftover, or use a slightly different homemade taco seasoning depending on whats in the cabinet. 

If necessary you can also try looking up substitutes to help decide what goes well in your dinner. 

Add in 1-2 tbsp tapioca starch mixed with 1-2 tbsp water to make a slurry and then add to the tex mex chicken and cook on low in slow cooker for an additional 30 minutes to thicken sauce. (you can also use cornstarch or arrowroot powder if that’s what you have on hand)
