What kind of meat can I use?

Bone-In chicken thighs are my favorite to use in any chicken dish. They come out with amazing texture when cooked in a slow cooker or instant pot. (I remove the skin) You can also use chicken thighs (bone-in optional) or boneless chicken thighs.

Ingredients

Ingredients:

  • 2 lb Bone-In Chicken Thighs, no skin*
  • 2 tbsp Taco Seasoning
  • 2 tbsp Tapioca Starch
  • 1 Green Pepper, cut into 1-inch strips
  • 1 Large Onion, cut into 1-inch strips
  • 1 cup corn (frozen or fresh)
  • 1 1/2 cup Salsa
  • 1 cup black beans

Supplies for freezing:

  • 1 Gallon Freezer Bag

Instructions

Directions:

  • Season chicken with taco seasoning and tapioca starch.
  • Place chicken, salsa, peppers, and onions into the slow cooker and stir.
  • Cook on low 6-8 hours or high for 3-4 hours.
  • During last hour of cook time add in corn and black beans.
  • Shred chicken, remove bones and stir back into slow cooker.
  • Serve over basmati rice (or cauliflower rice if paleo).

Freezer Directions:

  • Label Freezer bag with Recipe name, cooking from freezer directions and expiration date (todays date plus three months).
  • Add all ingredients to labeled freezer bag.
  • Seal bag, removing as much air as possible and freeze for up to three months.

Cooking from Freezer Directions:

  • Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok).
  • Dump contents of freezer bag into slow cooker.
  • Cook on low 6-8 hours or high 3-4 hours.
  • During last hour of cook time add in corn and black beans.
  • Shred chicken, remove bones and stir back into slow cooker.
  • Serve over basmati rice or in tortillas* (cauliflower rice if paleo).

Tapioca starch (flour) is a natural gluten free substitute commonly used in place of cornstarch. It makes the recipe much healthier as well because it is an organic non-gmo natural ingredient. If you do not have tapioca starch feel free to use cornstarch or arrowroot powder instead. (Here are some other tapioca starch substitutes.) What if I do not have all the ingredients? Don’t feel the pressure to have every single ingredient on the list in order to make the recipe. Feel the freedom to be creative and use what you have in the kitchen. Sub out some veggies for whats leftover, or use a slightly different homemade taco seasoning depending on whats in the cabinet. If necessary you can also try looking up substitutes to help decide what goes well in your dinner. How do you thicken up tex mex chicken sauce? Add in 1-2 tbsp tapioca starch mixed with 1-2 tbsp water to make a slurry and then add to the tex mex chicken and cook on low in slow cooker for an additional 30 minutes to thicken sauce.
