I forgot to thaw my healthy tex mex chicken freezer meal, now what?

No problem! You can go straight from freezer to slow cooker/crock pot. If the recipe doesn’t fit just thaw it out for a few minutes under warm water and you’re ready to go. Dinner made in under 60 seconds!

This freezer recipe will stay good in the freezer for 3-4 months.

What cuts of chicken can I use in this recipe?

This recipe calls for bone-in chicken thighs. I love the flavor and meat in a chicken thigh. But you can use chicken breast (boneless or not) or even drumsticks! I would not use any chicken with skin on because you will end up having too much fat in the dinner making it greasy.

What should I serve with this tex mex chicken?

I love to enjoy it over rice as a Mexican recipe bowl. Served with fresh fruit and some salsa and chips. Or get a little crazy and make some Mexican street corn on the side!

Why tapioca starch? What if I don’t have it?

Tapioca starch (flour) is a natural gluten free substitute commonly for cornstach. It makes the recipe much healthier as well because it is an organic non-gmo natural ingredient. If you do not have taopica starch feel free to use cornstach instead! (Here are some other tapioca stach substitutes!).

Ingredients

Ingredients:

  • 2 lb Bone-In Chicken Thighs, no skin*
  • 2 tbsp Taco Seasoning
  • 2 tbsp Tapioca Starch
  • 1 Green Pepper, cut into 1-inch strips
  • 1 Large Onion, cut into 1-inch strips
  • 1 cup corn (frozen or fresh)
  • 1 1/2 cup Salsa
  • 1 cup black beans

Supplies for freezing:

  • 1 Gallon Freezer Bag

Instructions

Directions:

  • Season chicken with taco seasoning and tapioca starch.
  • Place chicken, salsa, peppers, and onions into the slow cooker and stir.
  • Cook on low 6-8 hours or high for 3-4 hours.
  • During last hour of cook time add in corn and black beans.
  • Shred chicken, remove bones and stir back into slow cooker.
  • Serve over basmati rice (or cauliflower rice if paleo).

Freezer Directions:

  • Label Freezer bag with Recipe name, cooking from freezer directions and expiration date (todays date plus three months).
  • Add all ingredients to labeled freezer bag.
  • Seal bag, removing as much air as possible and freeze for up to three months.

Cooking from Freezer Directions:

  • Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok).
  • Dump contents of freezer bag into slow cooker.
  • Cook on low 6-8 hours or high 3-4 hours.
  • During last hour of cook time add in corn and black beans.
  • Shred chicken, remove bones and stir back into slow cooker.
  • Serve over basmati rice or in tortillas* (cauliflower rice if paleo).
