Substitutions:
- Chicken Thighs instead of Chicken Breasts: Use 2-3 lbs of boneless, skinless chicken thighs instead of chicken breasts for a richer and juicier flavor.
- Red Pepper Jelly instead of Fig Jam: Substitute the fig jam with an equal amount of red pepper jelly for a sweet and spicy twist to the dish.
- Goat Cheese instead of Feta Cheese: Swap the feta cheese with an equal amount of crumbled goat cheese for a tangier flavor profile.
Additions:
- Sliced Red Onions: Add thinly sliced red onions to the marinade for extra flavor and a pop of color. Red onions freeze well and will complement the sweetness of the fig jam.
- Fresh Rosemary: Include fresh rosemary sprigs in the marinade for a fragrant and earthy aroma. Rosemary pairs beautifully with chicken and figs.
