Ingredients
  
  • 2 lbs ground beef
  • 0.25 cup Medjool dates pitted and diced
  • 1 red bell pepper diced
  • 1 pint cherry tomatoes halved
  • 1 (14.5 oz) can fire-roasted tomatoes
  • 0.5 cup green olives
  • 2 tbsp olive jar brine
  • 1 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp salt
Day of Cooking:
  • 2 bunches green onions diced
For Serving:
  • 8 tortillas
  • Your favorite taco toppings optional
Instructions
 
Make it Fresh | Slow Cooker Directions:
  • Add all ingredients, except green onions and For Serving ingredients, to the slow cooker. DO NOT STIR.
  • Cook on low for 4-6 hours.
  • Mince beef in slow cooker. Stir in diced green onions and serve in tortillas. 
  • Top with your favorite taco toppings.
Freezer Meal Prep Directions:
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Add all ingredients, except Day of Cooking and For Serving ingredients, to the freezer bag.
  • Seal bag, removing as much air as possible, and freeze for up to 3 months.
Slow Cooker | Cooking Directions:
  • Thaw freezer meal in the fridge for 12-24 hours before cooking.
  • Dump the contents of the freezer bag into a slow cooker. DO NOT STIR.
  • Cook on low for 4-6 hours.
  • Mince beef in slow cooker. Stir in diced green onions and serve in tortillas. 
  • Optional: Top with your favorite taco toppings. 
Instant Pot | Cooking Directions:
  • Thaw in the fridge for 12-24 hours before cooking. (Meals can be cooked from frozen, but some Instant Pots may trigger a burn notice due to slow steam generation.)
  • Dump the contents of the freezer bag, plus ½ cup water, into the Instant Pot. DO NOT STIR.
  • Set to High Pressure for 15 minutes, followed by a quick release.
  • Mince beef in Instant Pot. Stir in diced green onions and serve in tortillas. 
  • Optional: Top your taco with your favorite taco toppings.

What to Serve with Beef Picadillo

  • Corn on the cob – grab them frozen, boil, microwave, or grill, and (if you’re feeling fancy) dress with lime, mayo, and chili powder for that elote vibe. 
  • Guac and veggie sticks – cucumber, carrot, and pepper sticks make for a healthier dipper for this classic side.
  • Black bean salad – toss canned beans (drained and rinsed, of course) with corn, lime, cilantro, and salt, for an easy and colorful side.

Freezer Notes for Beef Picadillo

  • Recipe will last 3-6 months in the freezer (squeeze out as much air as possible when sealing freezer bag to ensure long-lasting)
  • As a meat recipe, I recommend thawing for 12-24 hours before cooking. This follows food safety guidelines and makes it much easier to transfer from the freezer bag to your slow cooker/Instant Pot. 
  • Recipe can be frozen after cooking, however this does change the texture and flavor. I recommend freezing raw, not cooked.
  • When reheating, warm mixture in a skillet over medium heat with a splash of water or reheat in the microwave in 30–45 second intervals, stirring between each.

FAQs

Can I use ground chicken or turkey instead of ground beef? 

Yes, you can use either ground chicken or ground turkey, but it’s leaner than ground beef and can dry out. To help prevent that, add an extra tablespoon of olive oil or a splash of broth to keep it moist. Also, this may go without saying, but using another meat will change the flavors a bit, too. But totally doable! 

We aren’t olive fans, what do I do? 

No worries if you aren’t a fan of olives. You can leave them out, but you may want to add a splash of vinegar or lime juice in their place. It’ll replace that briny tang and keep the flavors balanced. 

Can I use diced tomatoes instead of cherry tomatoes? 

Cherry tomatoes are truly best here, so I would not recommend switching to diced tomatoes. Cherry tomatoes hold their shape better during the long cooking process, which maintains the fresh texture and prevents the dish from drowning in liquid. Most other times I’d choose the can of diced tomatoes for ease, but in this case it’s worth keeping it fresh with the cherry tomatoes. 

Why can’t I stir the recipe before cooking? 

If you stir the recipe before it cooks, the tomatoes will get pushed to the bottom, which can trigger a burn notice in the Instant Pot and can cause them to get overcooked in both the slow cooker and Instant Pot. Everything will cook perfectly without being stirred beforehand – don’t worry! 

My Beef Picadillo turned out too salty; how can I fix it? 

If the olives or brine are extra salty, this can happen. But don’t worry, it’s totally fixable. You can balance it out by stirring in a small can of unsalted diced tomatoes, adding a splash of broth, or squeezing fresh lime juice in it.
